Making Spinach Casserole but want to make it more of a show stopping side dish? This recipe takes a favorite and bumps it up a notch to make it as delicious to look at as it is to eat.
Ingredients:
4 tablespoons butter
1/4 cup chopped onion
1 garlic clove minced
1/2 cup Parmesan cheese
1/2 cup cottage cheese
1/2 teaspoon salt
2 eggs raw
3 hard boiled eggs with shell removed
Directions:
In large skillet, put butter onion garlic, and
spinach. Cook over medium heat with lid on until spinach is wilted, stirring occasionally.
Drain in strainer pressing to remove excess liquid. Put in food processor and pulse until spinach is well mixed but not pureed. Mix in cottage cheese and cheese, then add 2 raw eggs and stir.
Spray mini-loaf pan with non-stick spray and add parchment paper as well for easy removal of the loaf when finished cooking.
Layer a small amount of the spinach mixture to the bottom of the pan (about 1/3 of the mix). Then lay hard boiled eggs end-to-end down the center of the loaf. Add remaining mixture to the sides and cover the eggs completely.
Bake at 350 for 45 min.
